POKOTABI / VELROSIER
VELROSIER
At VELROSIER in Kawaramachi, Kyoto, traditional Chinese flavors are deconstructed and reimagined into inventive course menus. Thick cuts of shark fin, striking textural contrasts, and curated pairings of Chinese teas and wines shape a distinctive dining experience.
01 / ABOUT THE PLACE
VELROSIER welcomes diners into a serene, minimalist dining room framed in deep black tones in Kyoto’s Kawaramachi district. Views into the open kitchen reveal cooks carefully prepping and plating each course, quietly building anticipation for the meal ahead. The kitchen deconstructs the foundational flavors of traditional Chinese cuisine, reconstructing them through precise heat control and layered, intricate sauces across a multi-course tasting menu.
Every course reveals calculated attention to diners' gestures and nuances in temperature. A deconstructed gyoza brings together warmth, cold, and the lightness of airy foam on a single spoon, while char siu styled like Peking duck is wrapped by hand at the table, reframing familiar Chinese components with inventive flair. Other creations showcase substantial ingredients balanced by subtle seasoning, such as a thick cut of shark fin coated in a sauce laced with sweet crab meat.
The multi-course meal offers generous pacing and depth, progressing seamlessly through main courses of meat and fish before arriving at an inventive take on fried rice. Alongside wine pairings, the beverage program features an extensive selection of aromatic Chinese teas—including Da Hong Pao, Anxi Tieguanyin, and Fenghuang Dancong—allowing diners to appreciate shifts in aroma and temperature from cup to cup. Dessert can be followed by a custom house-blend coffee roasted specifically for the restaurant or a fragrant black tea. Reservations are required, making this quiet setting well suited for an anniversary or a celebratory dinner while traveling.
